I was born in 1897 in Louhans, France
Growing up I worked for my father who was the tenant for the hotel-buffer at Louhans Station.
My traingin took me to The Hotel Bristol in Paris when I was 18.
I continued as a saucier at The Hotel Majestic and a poissonnier at The Hotel Royal.
In 1923 at the age of 26 I opened my restaurant La Pyramide in Vienne, south of Lyon. It was the Roman stone pyramid outside that I took the restaurants name from.
I trained many famous chefs such as Paul Bocuse, Alain Chapel, and Jean and Pierre Friosgros.
My once little notebook titled "Ma Gastronomie" is now a published book for chefs alike to read!
